Native Jollof Rice with it's distinct taste and flavour😋, is one of the easiest rice recipes to make requiring few simple ingredients and a perfect substitute for when you're bored of other rice recipes (also when you want to eat on a budget😁🤫).
It was given the name Concoction Rice because it's a meal you make when you crave something with lots of ground crayfish, super spicy, oily,with a fresh kick and lots of onions and you also want to eat rice as a Nigerian, so you throw in all the ingredients together like you're making a form of concoction.
As a student, you will need to cook Concoction rice at some point or another , this is a meal you cook when you don't have time and the means to buy the ingredients for a proper jollof rice, when you just want to fill stomach space hence the name Emergency Jollof Rice.
For some though, it's no longer an emergency but a full-fledged meal filled with plenty orisirisi like smoked fish, prawns, ponmo, suya, boiled eggs.
In this method, I just made use of plenty crayfish, feel free to add some smoked fish if you have any😜.
INGREDIENTS
- 2 cups of rice
- 2 cooking spoon palm oil
- 1 onion bulb
- 6 habanero peppers
- 2 stock cube
- 5 tablespoon of ground crayfish
- A handful of chopped scent leaf.
PROCEDURE
- Wash rice and parboil the rice, once its half cook wash, drain and set aside.
- Place a pot on a medium heat, add palm oil and heat for about 3 minutes but don’t bleach; Add chopped onions and fry, add the blended pepper and fry till the water dries up.
- Add the crayfish, knorr cube and salt, mix together, then add a little water and cook till oil floats on top of the sauce.
- Add the parboiled rice to the sauce and stir to combine, add a little water to cover the rice and reduce the heat.
- Cook rice on low heat till almost done (add more water if needed), check for salt and seasoning.
- Cook for another 5 minutes till the water is almost dried up then add scent leaves. Allow the water to dry completely, stir and turn off heat and serve.
