Macaroni Salad
Classic Macaroni Salad Recipe
This salad is one of the best salad you would ever try. It is tasty, very easy to make and use few ingredients which you can easily find in your pantry plus a simple and creamy mayo-dressing.
Macaroni Salad Ingredients:
- 1-1/2 cups Macaroni (any shape is fine)
- 1 cup of diced carrots
- 1 cup of diced cucumber
- 1 hard tomato
- 1/2 large onions
- 2 hardboiled eggs
Macaroni Salad Dressing:
- 3 tablespoons mayonnaise
- 1 tablespoon of condensed milk
- 2 teaspoon red chilli pepper
How to Make Macaroni Salad:
- Place the macaroni in a pot, add some salt and cook till tender but not too soft (a minute past al dente)
- While it is cooking, wash the carrots, cucumber, onions and tomato, dice and set aside. Remove the centre of the tomato before dicing to avoid adding water to the salad.
- When the macaroni is done, sieve out the water and rinse in cold water (to remove the starch).
- In a large bowl, assemble the cooked macaroni, the diced carrots, cucumber, onions and tomato.
- Add the mayonnaise, condensed milk and pepper, mix well to combine. You can adjust the dressing to your taste.
- Lastly, dice the hardboiled eggs and place on top, this is to prevent it from being crumbled while you're mixing in the salad dressing.
- You can serve immediately or pop in the fridge for an hour or so to chill (the best in my opinion). Enjoy!! 😋
