Step up your stew game with this salad stew recipe, it is simple and easy to make and the end product is crunchy, more nutritious and colourful.
Have any leftover stew from Sunday or any other time or perhaps you want to try something different from your usual fry tomato in oil, add meat stock, season and serve? You came to the right place.
I first made this in my aunt's house when I went visiting, the children were complaining that they're tired of tomato stew every time, and she said, "let's make salad stew then"
Here's a picture of a tomato stew I made last time from which I got the leftover, looks yummy right?
1. Vegetables: You can use your preferred choice of vegetables. I used: 2 medium carrots, 1 small cabbage, 1 green pepper, 2 spring onions, a handful of green beans and green pepper each.
2. Tomato stew: either freshly made or leftover from last time.
3. Vegetable oil: like 3 tablespoon
4. Seasoning cube
5. Curry
6. Salt and pepper to taste
HOW TO MAKE SALAD STEW RECIPE:
1. Prepare the vegetables: Dice the carrots, green pepper and green beans into cubes, cut the cabbage and spring onions into thin slices then blanch (place in hot water) the green pea.
2. Stir fry the vegetables: Add the oil into a glean dry pot and place on medium heat.
Fry the onions till translucent (30 seconds).
Add the carrots, green pea and beans, stir and leave for 2 minutes.
Then add the cabbage and green pepper, the seasoning, curry, pepper and salt as desired, stir and leave for few seconds (to avoid it getting too soft).
3. Add the stew: Lastly, add the tomato stew, stir cover the pot and leave to simmer for few minutes.
