Apple Cake Recipe
The decadent taste of this apple cake, with the juicy chunks of apple in it and the match-made-in-heaven between cinnamon and apple is an out-of-this-world feeling not to forget the intense citrus flavour from the lemon zest.
One of the fruits on my top list asides avocado is apple (an apple a day keeps the doctor away right?).
Another thing I think you should know is that I always find a way to incorporate each of these fruits into my cooking and baking.
One of those days, with a place of sliced apple by my side, I went on a visit to my friend (Google) to find ways I can do this. I read some recipes, watched some videos then I stumbled upon this Fresh Apple Cake Recipe by Precious core.com and boom! I got myself a winner.
I proceeded to make this recipe with some tweakings of my own and honestly, I haven't tasted anything better. Is it the apples? Or the cinnamon? Or the lemon zest? Or the fact that it is moist just like I wanted? I couldn't stop taking pictures and stuffing my mouth as I go.
EQUIPMENTS NEEDED:
- Bowls (2 or 3)
- Whisk/spatula/wooden garri turner (any one will do)
- Cakepan (8 inches)
- Measuring cups and spoons.
- Pot with rack (I used a stove top) or oven if you have one.
WHAT YOU'LL NEED TO MAKE APPLE CAKE:
For the cake:
Apple (2): This recipe is never possible without the apples. I used 2 green apples, but you can use the red ones too or what ever colours of apples available in your area.
Flour (2cups): Ensure you measure the flour correctly, avoid packing the flour into the cup but rather use a spoon or another cup to scoop and sprinkle the floor into the cup, and tap gently and scrap off the excess ontop.
Baking powder (1/2 tablespoon): This is the leavening agent that will make the cake rise. Ensure that its still active.

Cinnamon (1/2 teaspoon): This gives the cake a distinct flavour and a slight brown colour.
Salt (1/4 teaspoon): To bring out the flavour
Egg (3): I used medium eggs
Sugar (3/4 cup): For taste
Oil (1/2 cup): This can be replaced with butter for the flavour, I used oil because it makes cake moist.
Lemon zest (1 teaspoon): This gives an intense citrus flavour that go so well with apple.
Milk (1/2 cup): Adds moisture to the cake
For the Sugar Glaze:
1/4 cup of icing sugar
1-1/2 tablespoon of milk

HOW TO MAKE APPLE CAKE RECIPE:
Now that we've seen the ingredients needed, let's get to it. To begin;
Gather your ingredients; to avoid leaving out any during the process, then prepare your cake pan by oiling and flouring it.
Peel the apple, remove the core and cut into cubes depending on the size you want, then go on to sprinkle with 2 tablespoon of flour and mix to avoid it sinking to the bottom of the batter.
Add the dry ingredients (flour, baking powder, cinnamon, salt) in a bowl and mix thoroughly with a whisk.
In another bowl, break in the eggs, add the sugar and whisk till it dissolves. Add the oil, the vanilla and the lemon zest and mix well.
Fold in the flour, alternating with between the flour and the milk (first, half part of the flour, then the milk and lastly the remaining part of the flour).
Pour the batter into the prepared pan, tap gently on the table to dispel any air pockets.
The cake is done when a fork or toothpick inserted comes out clean.
Leave to cool for 5 minutes in the pan, run a knife along the edges, remove and place on a cooling rack to cool completely.
Cut yourself a slice and enjoy.

- If you don't like the chunks of apple in your cake, you can always blend the apple and mix in the batter.
- You can as well use some extra sliced apple to decorate the top before baking.
- There's also the apple upside down variation.
