Noodles commonly called Indomie by my fellow Nigerians even though there are several other brands (I wouldn't blame us, it's the first one we know lol) has grown to become part of our staple food since its introduction to Nigeria. It is loved by both children and adults alike and various methods of cooking it has been invented over the years.
Though it's always a common thing to see people just boil the noodles, add the seasoning and eat like that or with boiled egg or omelette. I believe that anything worth doing is worth doing well and nothing beats a noodle you sat down, washed your hands well and cooked.
I. hereby. present. to. you! *drum rolls*, Egg and Vegetable Stir-fried Noodles.
From the crunchiness of the vegetables, the softness of the eggs, the perfect doneness of the noodles, the enhanced taste of the seasonings and not to forget the spiciness which can only be given by none other than the ground cayenne pepper, I promise you this is yet another noodles you'd want to make every day.

Ingredients needed:
- 3 small packs of noodles (Indomie)
- 1 small onion bulb
- 2 cloves garlic
- 1 medium carrot
- 1 handful green beans
- 5 leaves cabbage
- 1 small green pepper
- 1 chili pepper
- 1-2 eggs
- 1 teaspoon curry (optional)
- 1 teaspoon ground pepper (optional)
- Seasoning (comes with noodles)
- 1 cooking spoon of vegetable oil
Preparation:

- Place your noodles in a pot of boiling water, add the green pea and simmer for 2 minutes.
- While the noodles is boiling, prepare your vegetables, cut the cabbage into slices, mince the garlic, onions and pepper, cut the carrots and green bean into small cubes.
- Pour the noodles into a seive.
- Place a frying pan on the stove and heat up the vegetable oil.
- Pour the onions and garlic and dry till they're translucent, add the carrots and green beans and leave for 1 minute.
- Add the cabbage and peppers, sprinkle the seasonings, some curry powder and the ground pepper. stir for few seconds.
- Whisk the egg and pour in, allow to cuddle a bit, then scramble.
- Lastly, add the parboiled noodles, mix with the vegetables, cover, the pan, lower the heat and allow to simmer for minute.
- Remove from fire and serve with boiled egg, any meat or fish of your choice.
