This recipe was a random idea that popped into my head one fine evening as I was munching away at my bread and avocado combo (I'm crazy about these two) and thinking of what to eat the next morning (I do that a lot haha). Swaying to the euphoria that only this two can bring, I spotted my sandwich maker (gifted to me by someone due to my love for toasted bread) at one corner of my room and it got me thinking, Who said I can only use this for bread and omelette only? Why not spice up things?
Luckily, some green plantains I got a few days back has ripened, I've got eggs and some fresh peppers, Mini Plantain Frittata here I come but this time with a little less ingredients than I know but whatever, I'm all about simplicity and getting something I can easily whip up for breakfast.
This recipe is an easy and simplified version of the conventional Frittata which one can easily whip up. It can be combined with custard/pap/tea for breakfast or eaten alone as a snack at anytime of the day.
Ingredients needed:
- 1 ripe plantain
- 2 medium-sized eggs
- 1 small green pepper
- 1 scotch bonnet pepper
- 1 tablespoon minced onions
- Half teaspoon ground pepper (if you want it spicy hot)
- Seasoning and salt to taste
- Vegetable oil

- Peel the plantain, cut into circles and sprinkle some salt.
- Fry in hot oil until golden brown, put in a sieve.
- Break the eggs into a plate, add the chopped peppers, ground peppers, onions, salt and seasoning.
- Whisk thoroughly and keep aside.
- Brush the sandwich maker with oil and preheat for 1 minute.
- Pour the egg mixture into the wells of the heating plate, top with the fried plantains and close.
- Allow to cook for 3 minutes or till the Ready Lamp of the sandwich maker turns on.
- Remove and serve while still warm.
