My Go-to Vanilla Cake Recipe
The soft, light crumbs, the buttery flavour, the moistness and the extra vanilla flavour makes this the best vanilla cake I've ever had.
Believe me I've tried so many vanilla cake recipes, both the ones that came out OK and the ones that came out as hard as rock,but none of them gave me what I really wanted.
Thankfully, someone from a Telegram group I was in shared this wonderful tip about how to get a spongy-textured cake, she said that for you to get the best results, the 4 main ingredients (flour, butter, sugar, egg) for cake should be in almost the same quantity in weight and for each cup of flour, add 1 teaspoon of baking powder.
Anyway, she proceeded to drop the recipe she uses which I tried out and it was amazing.
From there, I decided to tweak it a bit to suit my taste and ended up with this recipe I'm about to share with you.
HOW TO MAKE THE BEST EVER VANILLA CAKE

INGREDIENTS:
- 2 cups of flour
- 2 teaspoon of baking powder
- 1 cup of soft margarine
- 1 cup of sugar
- 5 medium sized eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of condensed milk flavour or any milk flavour (optional)
- 1/3 cup of whole milk
INSTRUCTIONS:
1. Preparing The Ingredients: Gather the ingredients to avoid forgetting any of them.
Grease your baking pan with butter/margarine or oil and dust with flour.
Then preheat your oven or pot whichever one you're using.
2. Dry Ingredients: Mix the dry ingredients; flour, baking powder in a bowl and set aside.
3. Wet Ingredients: In another bowl, cream the butter and sugar (with a whisk or mixer) until sugar dissolves and the colour changes.
Add the eggs one at a time, whisking after each addition.
Afterwards, add the vanilla and milk flavours and mix.
4. Combining The Wet And Dry Ingredients: Add the dry ingredients to the wet ingredients in 3 steps, first half of the flour, mix, add the milk and mix, then add the remaining part of flour and mix.
5. Bake And Serve: Pour into the prepared pans. Bake for 35 - 40 minutes in the preheated oven/pot at low-medium heat/180°C or 375°F till a toothpick inserted comes out clean.
Bring it down, allow to cool, run a knife along the sides of the pan and place on a rack to cool completely.
Serve as it is with your favourite beverages or with Chocolate Ganache, Nutella, Vanilla Icecream or Vanilla Buttercream Frosting as a dessert.
