Potato Porridge (Pottage) Recipe
This luscious potato porridge recipe is the perfect lunch or dinner ideas for when you're feeling lazy. It makes use of simple ingredients and gets ready in just few minutes.
At this time of the year, yams especially old yams which are perfect for porridges are like gold (very costly) and the new yams just being harvested which are somehow affordable just make bad porridges. I don't know if I'm the only one that notices that but not only will it not be sweet, it always comes out watery, the yam will be on one side and the water on another like they're on a cold war or something. I hope I'm not being too hard on our dear new yam lol (it has it's good sides though).
And this is where our sweet, sweet potato comes in, to satisfy those porridge cravings of ours.
I made this recipe with the simplest ingredients readily available on your kitchen counter.
HOW TO MAKE THE EASIEST SWEET POTATO PORRIDGE

INGREDIENTS:
- 7 potato tubers
- 1 small bulb of onion
- 3 tablespoon of ground crayfish
- 5 scotchbonnet pepper
- 1 cooking spoon of palm oil
- 2 seasoning cubes
- Salt to taste
- Bunch of vegetables (optional) or as you desire
INSTRUCTIONS:
1. Peel the potatoes and cut into medium-sized cubes, wash thoroughly, place in a pot, cover with water and place on fire.
2. As it's cooking, prepare other ingredients; dice the onions, blend the peppers, thinly slice the vegetables and set aside.
3. When the potato is a bit softened, add the onions, crayfish, pepper, palm oil, stock cube, cover and leave to cook for 10 minutes or till the potatoes are soft.
4. Add the vegetables, mix thoroughly and bring down from the fire. The heat will continue to cook the vegetables.
5. Serve and enjoy.
