Bread Omelette (Egg Sandwich)
A quick and easy breakfast sandwich recipe made with bread and eggs.
Bread Omelette is a common street food in India made by cooking bread and eggs together, flipping the bread and adding your fillings; meat, cheese, avocado, sardines etc. It became more popular sometime last year on TikTok — a platform that has, during this pandemic recorded a great deal of innovations and hacks by home cooks around the world. I tried out this recipe and I must say it's the one of the best sandwiches I've ever had, imagine having toast and sandwich in one.

INGREDIENTS
2 eggs,
2 slices of bread,
Some salt
Some pepper
1 teaspoon of spices (optional; I used turmeric and parsley flakes)
Toppings: bacon, cheese, avocado, shredded chicken or beef etc.
INSTRUCTIONS
1. Start by whisking some eggs in a medium bowl and season with salt, pepper and other spices
2. Add the eggs to a preheated frying pan with a bit of oil or melted butter in it.
3. Let the eggs set for about a minute before adding the bread.
4. Once eggs are slightly set, quickly dip both slices of bread in the eggs in the pan, then flip to expose the dipped side. Continue to let the eggs cook for another two minutes.
5. Using a large spatula, flip the entire egg-and-bread mixture over to cook the remaining side of the egg-soaked bread. Now you can add your desired toppings! I kept mine simple and plain.
6. Close the sandwich and continue to cook until both sides of the bread has begun to brown.
7. Remove from pan and serve warm, with your favourite drink.
