Jollof Spaghetti (Pasta in Tomato Sauce)
This spaghetti and tomato stew combo is a very tasty and one of the easiest one-pot recipes to make. A jollof rice inspired method of cooking pasta which you can customize as you want. You can choose to cook with or without vegetables, and also add any protein of your choice like shredded beef, chicken meatballs etc.
HOW TO MAKE JOLLOF SPAGHETTI

INGREDIENTS
1 pack of spaghetti
I cooking spoon of oil
4 large tomatoes
5 scotch bonnet peppers
1 sachet of tomato paste
1 onions
2 cloves of garlic
1 tablespoon of curry
1 tablespoon of thyme
2 stock cube
1-1/2 cup water/meat stock
Chicken seasoning (optional)
Vegetables (carrots, green beans, green pea...)

INSTRUCTIONS
1. In a boiling water, add the spaghetti, some salt and some oil (to prevent it from sticking together), parboil for 10 minutes and sieve.
2. Heat up the oil and sautée the onions and garlic together with curry and thyme.
3. Add the tomato paste, fry this for some seconds and add the blended fresh tomatoes and pepper
4. Stir together and fry till the water dries up (i.e the oil separates)
5. Add the crayfish, stock cube, some salt and water or meat stock if you have. You can also add some chicken seasoning.
6. Bring to boil, add the parboiled spaghetti, mix together and simmer on medium heat till the water is almost dried up.
7. Add the chopped vegetables (carrots, green beans, green pea, cabbage, green pepper), cover the pot and allow the water to dry completely.
8. Mix very well and serve with your protein of choice (boiled eggs, beef chicken, etc.) and your favourite side dish (plantain, coleslaw, etc).
