How to Make Coleslaw
A Very Simple yet Healthy and Refreshing Coleslaw made with a blend of freshly and finely shredded crunchy vegetables tossed in a creamy Homemade Mayonnaise dressing.
Coleslaw generally means cabbage salad. It is a toned down version of the typical Nigerian salad preferably served chilled. A perfect side dish to foods such as jollof rice, fried rice and other rice dishes, fried/grilled chicken, fish barbecue, moi-moi etc. or eaten as a meal on it's own.

INGREDIENTS
- 4-5 Carrots
- 1 Cabbage
- 1 Cucumber
- 6 pods of Green beans
- A handful of raw Green pea
- 1 Green pepper
- 1 Red onion
- 2 hard boiled eggs, sliced(optional: I was being extra)
- Homemade mayonnaise (as dressing)
1. Start by washing all the vegetables thoroughly. Scrape the carrots and boil the green peas 10 - 15 minutes to soften.
2. Cut the cabbage into two, remove the stalk and cut into thin slices.
Thinly grate the carrots.
Remove seeds from the cucumber and green pepper and dice nicely. (you can peel the cucumber skin if you don't like, also cut some into circular slices for decoration).
Also chop the green beans and onions and set aside.
By the time you're done, the green pea must have softened, remove from the hot water and place in a cold one to cool down.
Thinly grate the carrots.
Remove seeds from the cucumber and green pepper and dice nicely. (you can peel the cucumber skin if you don't like, also cut some into circular slices for decoration).
Also chop the green beans and onions and set aside.
By the time you're done, the green pea must have softened, remove from the hot water and place in a cold one to cool down.
3. Mix all the vegetables together in a large bowl, top with the sliced boiled eggs and cucumbers and place in the fridge to allow the flavours come together (it's perfectly fine if you don't have the time and means for that).
4. When you're ready to use it, drizzle a generous amount of your favourite dressing, I'm using my Homemade Mayonnaise here. Mix together and serve.
5. It can be eaten alone or as a side dish to rice, plantain, chicken, moi-moi etc.
NOTES:
- Mayonnaise can be replaced with Salad cream or you can use a mixture of both.
- If you like some heat, sprinkle some black pepper on it while mixing.
- You can also add some extra sugar or salt.
