Try out this amazingly delicious, light and fluffy pancakes with a delicate hint of coconut flavour.
I honestly had foodgasm when I tasted the first batch of these pancakes, I was humming all the way, oh! my love for coconut. It has the right amount of fresh homemade coconut milk, some freshly shredded coconut and a dash of coconut extract.
Pair this up with a freshly squeezed orange juice or any fresh fruit juice and you just may drift off to a tropical island.
HOW TO MAKE COCONUT PANCAKES

INGREDIENTS
For the Pancakes:
- 1-1/2 cups flour
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 tablespoon sugar
- 1/4 cup freshly shredded coconut
- 2 small-sized eggs (1 large egg)
- 1 cup coconut milk
- 2 tablespoon coconut oil (vegetable oil or melted butter)
- 1 teaspoon coconut extract
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground pepper
- 1 cup coconut milk
- 1/4 cup sugar
- 1 teaspoon cornstarch
- 1/8 teaspoon vanilla
INSTRUCTIONS:
To make the pancakes:
1. Start by mixing the dry ingredients (flour, baking powder, salt, sugar, and shredded coconut) in a bowl
2. In another bowl, mix the wet ingredients (eggs, milk, oil and flavours)
3. Then combine the wet and dry ingredients mixing properly but not for too long.
4. Leave for 2-3 minutes, then add the pepper (this is quite optional, I often add pepper in my pancakes to spice it up a little and curb down the egg taste)
5. Heat up some butter in a frying pan on medium heat, pour some of the pancake batter (1 used the 1/4 cup measurement)
Allow to cook for 2 minutes till bubbles form on top, flip to the other side and cook for another 2 minutes.
6. Remove in a plate and repeat this process till all the batter is exhausted.
To Make The Coconut Syrup:
Dissolve the corn starch in the coconut milk in a pot, add the sugar and bring to a boil while stirring continously, after 2 minutes, bring it down, mix in the vanilla and allow to cool down a bit before use.
Serving: Serve warm with a drizzle of the coconut syrup and a toppings of freshly shredded coconuts and chopped nuts.
