Homemade Mayonnaise (with no blender, no mixer)
This homemade mayonnaise is a creamy, delicious and much healthier option than store bought mayo (since there are no preservatives and additives) made with ingredients readily available in your kitchen pantry.
You just need 5 ingredients, a whisk and some muscle work, don't be scared, it's a good excuse to work out those arms 😉
HOW TO MAKE HOMEMADE MAYONNAISE

INGREDIENTS:
- 1 egg (separated)
- 2 tablespoon of lemon juice
- 1/4 teaspoon of salt
- 1 teaspoon of sugar
- 120 ml of vegetable or groundnut oil (a little less than 1/2 cup)
INSTRUCTIONS:
1. Carefully separate the egg yellow and egg white, place the egg yolk in a sizeable bowl, add the salt, sugar and lemon juice.
2. Whisk thoroughly till the mixture turns pale and become frothy (foamy)
3. Then it's time to add the oil, a little at a time.
I usually put this in a dropper bottle or you can pierce a hole in the cap of a water bottle, pour the oil into and cover tightly.
Make sure that the bowl is well balanced cause you'll be using one hand to add the oil and the other to whisk the mixture.
4. Start adding the oil drop by drop whisking all the way till the mixture starts to thicken. You can then increase the quantity of oil you add as you whisk till you exhaust it.
5. Use immediately in your salad or coleslaw or pop in the refrigerator till whenever you're ready to use it.

QUICK NOTES AND TIPS:
- If the mixture starts curdling while mixing, keep the oil down first and whisk thoroughly till it combines
- If it's too watery for your liking, add another egg yolk in a separate bowl, whisk till frothy and the add the previous mixture to it little at a time till it thickens.
- If it's too thick, you can make it lighter with some water
- You can use other types of oils you have provide it is neutral-flavoured i.e. it has no distinct smell and taste.
- Lemon juice can be substituted with vinegar if that's what you have
- This is just the basic mayo recipe, however you can customize it to your taste by adding maybe garlic, onion, mustard etc or you can spice it up a bit by adding some black/white pepper.
STORAGE
Place in an airtight jar and store in the refrigerator, this can last you for 3days to 1 week.
