This recipe is so simple and easy that you could whip them up in less than 30 minutes.The basic pancake requires four main ingredients; flour, egg, sugar and milk plus other optional ones like:
- melted butter; for the flavour,
- baking powder/soda; for some lightness and fluffiness,
- vanilla extract; for some sweetness and depth of flavour
- salt; to balance the sugar nicely. If you are using salted butter, you may want to skip this.
INGREDIENTS FOR MAKING PANCAKES:
Dry ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 tablespoon (1/4 cup) sugar
Wet ingredients
- 2 large eggs
- 2 cup whole milk
- 2 tablespoons melted butter (or oil)
- 2 teaspoons vanilla extract or any flavour of your choice (optional)

STEPS IN MAKING PANCAKES:
- Start by mixing the dry ingredients (flour, baking powder, salt, sugar) in a bowl,
- In another bowl whisk together the wet ingredients (egg, milk and melted butter and flavour)
- Then combine the wet and dry ingredients mixing properly but not for too long, whisk until just moistened (do not overmix) and leave for few minutes
- While waiting, Heat up a little butter (or a tablespoon of oil) in a frying pan on medium heat, pour some of the pancake batter (1 used the 1/4 cup measurement)
- Allow to cook for 2 minutes till bubbles form on top, flip to the other side and cook for another 2 minutes.
- Remove in a plate and repeat this process with more butter/oil and remaining batter till all the batter is exhausted. (this gives about 12 pancakes.)
- Serve warm, with desired toppings such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup
