Nigerian Puffpuff Recipe
Soft, delectable and quite addictive deep fried dough.
Puffpuff is a very popular West African street food known as puffpuff in Nigeria, bofrot in Ghana or beignet in French.INGREDIENTS
- 2 cups of flour
- 1/4 cup of sugar
- 2 teaspoon of yeast
- 1 cup of warm water
- Salt
- 1/2 teaspoon nutmeg (optional)
- Pepper and Onions, finely chopped (optional)
PROCEDURE
- Combine all the dry ingredients.
- Slowly add the water bits by bits while mixing till well incorporated and batter is smooth but not runny.
- Cover with a kitchen napkin and keep on a warm place to rise for 30-40 minutes.
- Set a deep pot on fire and heat up oil.
- Add the pepper and onions to the puffpuff mixture if using and mix.
- Scoop the batter with your hand and drop in the oil till almost full.
- Fry till golden brown on all sides.
- Remove and place on a parchment paper or kitchen napkin to drain off excess oil.
- Repeat frying process with the remaining batter till exhausted.
- Sprinkle some powdered sugar on top if you want it sweeter and serve as a snack with your favourite drink.
