The Best Cornbread Recipe
This is one cornbread recipe that will have you coming back for more, I just love how tender and tights the crumbs are, how fluffy and moist it is (you need no buttermilk for that) and the corn and buttery flavour?, oh my God!
INGREDIENTS:
- 1 cup of flour
- 1 cup of corn meal
- 1/2 cup of sugar
- 2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 2 medium-sized eggs
- 1/2 cup of melted butter
- 1 cup of milk

PROCEDURE:
- In a sizeable bowl, mix the dry ingredients (flour, cornmeal, sugar, salt, baking powder)
- In another bowl, mix the wet ingredients (eggs, butter, milk)
- Make a well in the center, add the eggs, melted butter and milk
- Make a well in the center of the flour mixture, pour in the wet ingredients and mix till well combined
- Grease a baking pan (round or square) with butter and coat with flour
- Pour in the batter and tap to remove airbubbles
- Bake in a preheated oven or pot for 25 to 35 minutes till a toothpick inserted comes out clean
- Serve with tea/beverages for breakfast, as a snack, with frosting or ice-cream as dessert.
If you're using Homemade Cornmeal like I did, I suggest you sieve out the corn fibres to get a finer, smoother mixture except maybe you like a little bit of texture.
