I know there's an unspoken rule about not tampering with the classic Nigerian Puffpuff Recipe but honestly, this Chocolate version will definitely convert you, it's soooo good.
Ingredients for Chocolate Puffpuff
- Flour - 2 cups
- Cocoa powder - 1/3 cup
- Sugar - 1/4 cup
- Yeast - 2-1/2 teaspoon
- Nutmeg - 1/2 teaspoon or vanilla
- Salt - 1/4 tsp
- Milk - 3/4 cup
- Warm water - 1/2 cup
How to Make Chocolate Puffpuff
- Place the water, yeast, some sugar in a bowl, mix and cover for 5 minutes till it becomes frothy.
- In another bowl, mix the dry ingredients; flour, cocoa powder, nutmeg, remaining sugar, salt and make a well in the centre.
- Pour the yeast mixture, milk and vanilla if using and mix till a stretchy dough is formed.
- Cover with a clingfilm or kitchen towel and place in a warm place for 30 to 40 minutes till it doubles in size.
- Heat up a reasonable amount of oil in a deep pot.
- Scoop and drop balls of the puffpuff batter into the hot oil and fry till all sides are golden brown.
- Scoop out from the oil and place in a kitchen napkin to drain the excess oil.
Tips For A Perfect Puffpuff:
- To test if the oil is hot enough, drop a small quantity of the batter in to the oil, if it sinks to the bottom its not hot enough, but it floats almost immediately, you can start frying.
- To get a smooth puffpuff, scoop and drop the batter with an ice cream scoop or gather a handful of batter in your hand and drop portions into the oil through your thumb and index fingers.
- Ensure you use enough oil and a deep pan to give room for the puffpuff to round up and turn immediately you put it in the oil.
- Make sure the oil is hot enough otherwise it'll sink to the bottom and soak up oil.
